Akiya Cafe began with a simple frustration: it is hard to find a dosa in the NCR that tastes the way it does back home. Not a thin, dry disc served in a hurry — but a proper ghee dosa, poured on a well-seasoned griddle, crisp at the rim and soft where it folds.
So we kept it small and stubborn. Batter is ground and left to ferment overnight, never rushed. Podi is roasted and pounded in-house. Coffee is a chicory blend, brewed into a decoction and pulled between tumbler and davara until it foams.
Two kitchens now — one in Gaur City 2, one in Sector 75 — cooking the same short menu, the same way, from eleven in the morning until eleven at night.

Four things we refuse to shortcut.
Overnight batter
Rice and urad dal, soaked and ground on site, fermented overnight. That sourness cannot be shortcut.
Real ghee
Every dosa on the card is a ghee dosa. It is what makes the edge shatter instead of bend.
Podi pounded here
Our gunpowder podi is roasted and ground in the kitchen, not bought in bags.
Degree coffee
Decoction brewed the slow way and served in a steel tumbler and davara, as it should be.
How a dosa gets to your table.
Soak & grind
Rice and urad dal soak for hours, then go through the wet grinder until the batter is smooth and aerated.
Ferment overnight
The batter rests overnight. This is where the sourness and the lift come from — there is no substitute for time.
Pour on the griddle
A ladle, a spiral, a ring of ghee. The griddle is seasoned and never scrubbed down to bare metal.
Serve immediately
Straight from the tawa to the plate with sambar and three chutneys. A dosa does not wait.
